The Villaseñor Scramble
     Toss some spinach and mushrooms into sauté pan with some olive oil. Cook for a few minutes until spinach reduces in size. Reduce heat and add 2-3 stirred eggs (with or without yoke). Cook over low heat, stirring until eggs are cooked through. Do not overcook. Salt and pepper to taste.
     Want to add more flavor? Add peppers and onions as you sauté the vegetables. Add cheese to melt or avocado and/or salsa following cooking.

Country Pear or Apple Puff Pancake
Ingredients
5 tablespoons butter, divided     
3 medium pears or 3 medium apples; peeled and sliced     
1/2 cup packed brown sugar, divided      
1 tablespoon lemon juice     
1/2 cup all-purpose flour     
1/2 cup whole milk     
3 large eggs, beaten     
2 tablespoons maple syrup     
1 teaspoon vanilla extract     
1/8 teaspoon salt     
1/2 teaspoon ground cinnamon     
1/4 teaspoon ground nutmeg     
Whipped cream, optional 

     In a cast-iron or other ovenproof skillet, melt 3 tablespoons butter over medium heat. Add pears or apples; cook and stir until tender, about 5 minutes. Stir in 1/4 cup brown sugar and lemon juice.
     In a bowl, whisk the flour, milk, eggs, syrup, vanilla and salt until smooth; pour over pears or apples. Bake at 450° until puffy, 10-12 minutes.
     Meanwhile, in a microwave-safe bowl, melt remaining butter. Stir in the cinnamon, nutmeg and remaining brown sugar. Spread over pancake. Bake until golden brown, 8-10 minutes. Cut into wedges and serve immediately. If desired, top with whipped cream.

Cast Iron Breakfast Pizza Skillet
In a large skillet, cook 3-5 ounces Italian sausage over medium heat until no longer pink. Add some diced potatoes, onion, green bell peppers, salt and pepper. Cook over medium-high heat for 15 minutes or so, until the potatoes are browned. Stir in some mushrooms or other additions as desired. (Pepperoni is good!  So are sun-dried tomatoes!)
Pour any number of eggs over the cooked sausage and veggie mixture. Arrange tomato slices on top. Sprinkle with Italian cheeses. Cover and cook over medium-low heat for 10-15 minutes or until eggs are completely set (do not stir). 

Coffee and Donut or Cereal with Milk
Instructions: Get more sleep. Oh, and before you do ANYTHING, drink a cup of coffee. Then...  
Get up early enough to get to the donut shop. Purchase an apple fritter or an old-fashioned glazed. Return home. (If you have kids at home, pick up a dozen. You’ll be a hero!) Log on to Zoom and push "mute" so we don't hear you munching on your donut.  
Find a "clean" bowl. Pour in your favorite cereal, or mix together the leftover 1/4 cup your kids left behind in many different boxes. Add milk. If it's an emergency and you're out of milk you can use OJ, but we don't suggest it. Find a spoon and eat. Log on to Zoom so we can hear you crunching away!
